GOLDEN ANCHOVY RECIPE
Ingredients-
Mandeli fish (Golden Anchovy) 24-28 Cleaned
Salt to taste
Red chilli powder 1 teaspoon
Turmeric powder 1/2 teaspoon
Ginger-garlic paste 1 tablespoon
Lemon juice 1 tablespoon
Oil for deep-frying
Cornflour/ corn starch 1/4 cup
Rice flour 3/4 cup
Semolina (suji) 1/2 cup
Fresh coriander leaves chopped 1 tablespoon
Green chutney to serve
Onoin rings to serve
Lemon wedges to serve
Procedure-
1) Add the each anchovy fish in hot water and keep it immersed for 1 hr
remove from water and rinse it.
2) Add salt, red chilli powder, turmeric powder, ginger-garlic paste
and lemon juice and mix well. Set aside to marinate for 5-10 minutes.
3) Heat sufficient oil in a kadai.
4) Take cornflour , rice flour, semolina, salt and coriander leaves in a
plate and mix well. Roll the fish in this mixture and slide into hot oil
and deep-fry till golden brown and crisp. Drain on absorbent paper.
5) Arrange them on a serving plate and serve hot with green chutney,
onion rings and lemon wedges.
